What is the difference between vanilla extract and vanilla absolute?
Vanilla absolute is not the same as the vanilla extract you might have in your baking supplies. Generally, the vanilla extract you bake with is extracts of vanilla beans in alcohol. It contains traces of minerals and is thinner in consistency than absolute.
To make pure Madagascar Vanilla Absolute, the vanilla pods must first undergo a CO2 extraction process in which the beans are ground into small pieces and placed in a pressurized extraction vessel.
In a separator, these chemical compounds are separated, and the CO2 liquid is converted back into a gas, leaving the vanilla extract clean and free of solvent residues.
The final step is the use of a pure and natural alcohol solvent to remove any remaining waxes or other ingredients to create the final product: pure and natural vanilla absolute. This final step also concentrates the natural vanillin, which gives vanilla its incredible aroma.
CO2 extraction is cleaner than chemical extraction, leaves less residue, and is greener and more sustainable.
